Portland-based ice cream shop Salt & Straw is leading a unique initiative to combat food waste. The shop transforms surplus food into delicious ice cream flavors, raising awareness about the growing issue of food waste in the USA and beyond.

In the USA, a staggering 103 million tons of food are thrown away annually, with nearly 40% coming from private households. In Germany, the figure stands at 11 million tons, equivalent to the weight of almost 8,000 cars or over 2,000 elephants. Salt & Straw aims to tackle this problem by giving surplus food a second life through innovative upcycling methods.

The ice cream shop uses ingredients like orange peels, strawberry scraps, whey, and cocoa pulp, which would otherwise end up in landfills. These upcycled ingredients are transformed into unique ice cream flavors, such as 'Orange Peel Marmalade' and 'Strawberry Scrap Sorbet'. This not only reduces waste but also encourages consumers to think about their food choices and support sustainability.

Salt & Straw's upcycling initiative is part of a growing movement focused on sustainability and environmental protection.
